摘要:该研究经筛选实验确定1株转化率较高的植物乳杆菌ZN1,并将其应用于红景天发酵实验;通过单因素和正交实验,得到最佳发酵条件为:固液比1∶20 g/mL、接种量1.0%、初始pH 6.5、培养时间18 h,在此条件下,测得红景天苷含量为4.01%,比发酵前提高了210.85%;抗氧化实验结果表明,发酵后的红景天抗氧化能力明显提高,DPPH自由基清除率由30.78%增加到72.62%,提高了135.93%。

Study on Increasing Salidroside Content by Probiotic Fermentation

Abstract: This study identified 1 strain of Lactobacillus plantarum ZN1 with relatively high conversion rate through screening experiments and applied it to the fermentation experiment of Rhodiola rosea. Through single factor and orthogonal experiments,the optimal fermentation conditions were obtained as follows:solid-liquid ratio of 1∶20 g/mL,inoculation amount of 1.0%,initial pH of 6.5,and cultivation time of 18 h. Under these conditions,the content of salidroside was determined to be 4.01%,increased by 210.85% compared to before fermentation. Antioxidation experiment result showed antioxidant ability of fermented Rhodiola rosea obviously increased, the scavenging capacity of DPPH free radical increased from 30.78% to 72.62%, an increase of 135.93%.
